I’m one of those folks who tends to bake when I’m stressed or anxious. So, you can only imagine how these weeks in quarantine have been. I’ve joked that the 19 in COVID-19 will represent my anticipated weight gain.
Seriously, I hope all my friends and neighbors will remain healthy and safe. If you, too, are bored or looking for some new recipes, may I suggest:
Onion Bisque
Slice two sweet onions
Sauté with one stick of butter
Add ½ cup of white wine
4 tbsp. Flour (Wondra Flour is best, or cornstarch would work, too)
Cover and let caramelize
Use an emulsion blender (or not)
Add 3-4 cups of chicken bouillon
Add 2 cups heavy cream (half and half, or milk, if you must)
Cook on a medium heat for ½ hour
Everything Cookies
Use your favorite chocolate chip cookie recipe (or a pre-made mix, no one will judge you!)
Add a handful of what ever you have on hand
I used a trail mix with chocolate caramels
You can add: mini marshmallows, potato chips, M&Ms, etc.
Bake on a cookie sheet with parchment paper (trust me – marshmallows are nasty on cookie sheets)
Bake at 350 degrees for nine to 10 minutes
Quiche!
Start with any pre-made pie crust (or for my ambitious friends: 1 ½ cups flour + ½ cup lard + pinch salt + 4 or 5 tbsp. ice-cold water)
Wisk 6 eggs with *secret ingredient – 1 small container plain yogurt / or ½ cup if you have a larger container * This will make a HUGE difference in your quiche!
Then add whatever you’d like … veggies, bacon, roasted red peppers, cheese.
Place into a 350-degree oven for 30-35 minutes (or when you finger tests the center and it doesn’t wiggle).
The two I made were spinach with feta and bacon with cheddar.
