New head chef brings international culinary experience to Conference & Event Center Niagara Falls

Global Spectrum has named Jason LaMotte as the new head chef at the Conference & Event Center Niagara Falls. A graduate of Paul Smith College's Culinary Arts Program, LaMotte was born in Buffalo and spent three years abroad as the executive chef and managing partner at Gordon Ramsay Maze in Prague, where he and his team won a Michelin Star Award for their innovative concept. He also worked under John Besh in New Orleans, and prepared meals for various governmental fundraisers in Washington, D.C., including those at the White House.

LaMotte's expertise includes menu development with the use of local and organic foods; ordering, receiving, production coordination and all back-of-house operations; training and development of internal staff; as well as health and safety operations.

One of LaMotte's first endeavors is launching a regional farm-to-table effort with local farmers in Niagara County. He also brings with him an appreciation of inventive and international flavors, including New Orleans and French-style cooking, which is being demonstrated at the Conference & Event Center Niagara Falls for the very first time.

"My favorite dish to make is gumbo," LaMotte said. "It is so complex and full of rich, amazing flavor, it truly is an art to make it just right." Always learning new techniques, he said that he loves to "experiment to find new ways to twist current dishes, while utilizing the best possible local ingredients and allowing their natural flavors and texture to speak for itself, with minimal interference from me."

LaMotte's culinary expertise has already tempted the taste buds of members of the Buffalo Niagara Partnership, who hosted their recent "Execs Connect" networking event at the Conference & Event Center Niagara Falls on July 10.

"We had a wonderfully positive response from the approximately 100 Western New York business executives in attendance," said Global Spectrum's Ryan Coate, general manager of the Conference & Event Center Niagara Falls and Old Falls Street, USA. "Chef Jason's cuisine was definitely at the forefront of conversation that evening."

A resident of Williamsville, LaMotte's resume also includes stints at the Hard Rock Café in Prague, The Cheesecake Factory in Long Island, and at Wegmans in Western New York. He and his wife, Petra, have three children.
