The Healthy Scratch to open in The Shops at HarborCenter

Quick-service restaurant will offer a variety of unique, healthy food and drink options

Jessie and Kelly Pegula today announced the creation of The Healthy Scratch, a healthy, quick-service restaurant that will offer a variety of healthy food and drink options in The Shops at HarborCenter, at the corner of Main and Perry streets in downtown Buffalo. The new restaurant is scheduled to open this fall.

"Kelly and I have been deeply inspired by our parents' success in a large number of business ventures," Jessie Pegula said. "Their hard work, passion and success has inspired us to pursue our own endeavor. We believe that a healthy diet has an overwhelming impact on your quality of life. We want to share our passion with our customers and help everyone to lead a healthy lifestyle."

The Healthy Scratch is dedicated to providing a fast and healthy, dine-in or take-out experience through a variety of fresh, high-quality, organic ingredients. The quick-service restaurant will offer yogurt, smoothies, acai bowls, a wide assortment of fresh, cold-pressed juices, salads, wraps, overnight oatmeal and other healthy grab-and-go food options. The restaurant will also offer branded merchandise, water bottles and natural beauty products.

Jessie Pegula, a professional tennis player, will lead in the creation and development of the healthy food and beverage menu items. Jessie's passion for health and wellness through organic food and beverages stems from her six-year professional sports career. Jessie continues to consult with numerous health and wellness experts, including tennis, NFL, NHL and MLB professionals.

Kelly Pegula, a business marketing college student, will lead in the design and sale of apparel and other merchandise. Kelly and Jessie have both designed and launched successful clothing lines under the One Buffalo brand. Kelly recently extended her men's and women's designs, and has partnered with New Era Cap Company to design both 59FIFTY and 39THIRTY caps.

"We couldn't be more excited to open this restaurant in Buffalo," Kelly said. The continuing growth of the Canalside district has made our waterfront an extremely exciting location. The development of this region, recent trends in the health food industry, and our passion for both has made this venture all the more meaningful for us."
