The second guest speaker in Lewiston Council on the Arts' new Discovery Series is Susanne Schillings, pastry chef and owner of Exclusively Schillings. Her presentation, "Art & Mystery of Chocolate," will take place on Wednesday, April 17, at 7 p.m., in the Historic Lewiston Opera Hall, 732 Center St.
Discover the mystery of chocolate. Learn about the history of chocolate, where it comes from and is made, as well as the various types and applications. The first half of this presentation is in lecture format and the second half includes a hands-on demonstration. Participants will learn how to "temper" chocolate and make basic clusters and a ganache to cover a chocolate cake. The audience will then benefit from a tasting of the chef's creations.
