"F-Bites" nutrition program teaches culinary and leadership techniques

Chef Bobby Anderson, a Niagara Falls native and competitor on the fourth season of FOX's "Hell's Kitchen," is bringing "F-Bites" youth nutritional cooking program to Old Falls Street each Thursday, from noon until 1 p.m.

The vocational culinary series began recently and will run through Sept. 4 on Old Falls Street's middle block. The interactive family-friendly series is free and open to the public. New student chefs are encouraged to participate throughout the summer. Registration is not required.

Participants in the Old Falls Street series will learn culinary tips from "F-Bites" graduates and will participate in fitness challenges, cooking demonstrations, and taste free samples of Northern Italian cuisine infused with southern flair. Dishes include:

•Caramelized sweet onion ham hock with English sweet pea risotto (Gordon Ramsay's personal recipe)

•Butterscotch and maple-braised short ribs

•Barbecue pulled pork osso-bucco

•White verbena chocolate bananas foster bread pudding

•Housemade red velvet doughnut cake

Anderson has hosted the "F-Bites" vocational program for the past five years within various middle and high school classrooms, community centers and other after-school activities throughout the Western New York area. Through a series of interactive and highly entertaining sessions, he is able to relate to children and young adults while teaching them not only fine dining culinary practices, but leadership qualities and real-life experiences he encountered while working with Ramsay.

Those who participate in the Old Falls Street series will interact with "F-Bites" vocational graduates, who aspire to become future chefs.

In additon to the Old Falls Street sessions, Anderson is hosting a similar free series at Canalside in Buffalo each Tuesday, from 11:30 a.m. to 1:30 p.m., through Aug. 19.

"We are happy to include chef Bobby's culinary programming on Old Falls Street and at Canalside," said Global Spectrum's Ryan Coate, general manager of both venues. "His entertaining techniques make for great audience participation and allows people of all ages to experience fine cuisine in a fun and informative way."

Anderson grew up in the Packard Court neighborhood of Niagara Falls. His story of adversity and determination makes him a natural role model for students as he faced some of the same challenges they face. After graduating from the former Niagara Falls High School, he studied culinary practices at the Pillars and Post in Canada (a Michelin Star restaurant), and perfected his craft at Buffalo's E.B. Greens Steakhouse, Harry's Harborview Restaurant, Templeton Landing and Hyde Park Steakhouse. He has also worked within Ramsay's kitchens in London.

Anderson resides in Buffalo. He has twin sons, Jabrel and Jamar.
